In keeping with the hotel’s pledge to sustainability, seafood comes from a regenerative source, fish is line-caught, meats and poultry are grass-fed and natural (organic where possible) and even the wine list is 100% organic or biodynamic.

Bartenders can certainly put an artful twist on classic favorites, too, but why not go a little off-the-grid?
